Running the Pass
Running the pass was an interesting and exciting experience. I have learned how to keep track of each and every table in an organised way. For example: if a table was served bread I wrote a small “B” sign on the check next to the starters or when the starters were cleared I tore the bottom of the check.
I believe I am a well-organized person, therefore, the role of pass suited me. I ensured communication between front of house and back of house goes smoothly. However, the person on pass very much depends on the information the people on stations and running provide them. For that reason it is very important to have good communicational skills.
Working on pass taught me that it is very important to understand the whole operation of the restaurant and be able to oversee all the procedures and phases. It is essential to be able to stay calm and organized, especially for the person on pass, even if the kitchen or front of house gets stressful since the communication needs to stay consistent.
